Tasty Burritos

This burrito is about as close to perfect as I can imagine. A few things that set it apart from other burritos that I think make a big difference:

  • Shredded chicken instead of ground beef: better taste, better texture, and healthier.
  • Fresh diced tomato instead of salsa: cheaper, fresher taste, less messy.
  • Green onions instead of white or yellow onions: not as overpowering, no indigestion, don't sting your eyes when you chop them up.
  • Avocados instead of guacamole: fresher taste, easier to prepare, better texture

Ingredients (3-4 big burritos)

1. Cholula hot sauce or whatever hot sauce you prefer. This just gives you an option for an extra bit of zing but the burritos are great without hot sauce

2. 2 split chicken breasts with skin and 1 packet of taco seasoning (i prefer McCormick Chicken Taco seasoning mix mostly because it looks nicer)

3. 1 tomato

4. 1 package of tortillas

5. Some sour cream

6. 6 green onions, chopped

7. 1 avocado, not too ripe; a bit firmer texter is better in my opinion

8. 1 can of low fat refried beans

The only marginally difficult bit of this "recipe" is the chicken: Place chicken breasts in a pot with enough water to cover them and boil for 7 minutes. Reduce heat and simmer with lid for 35 minutes. Remove chicken and cool in refrigerator. After chicken has cooled discard bones and skin and shred (do not cut) into bite size pieces. Mix shredded chicken with a cup of water or chicken stock and 1 packet of taco seasoning and cook in a pan on high until most of the liquid has evaporated.
